AEBLESKIVER STORY
 

Aebleskiver:  A Unique Danish Treat

 

Legend has it that Danish men originated aebleskiver in Viking days.

Aebleskiver are little round pancake balls served with powdered sugar and      raspberry jam.  But where they came from is lost in thousands of years of Danish history.

            One theory is that Viking warriors, after a big battle, returned to their ship badly beaten with their iron shields dented and battered.  Wishing to eat, they mixed the flour but nothing to cook in.  So they mixed the flour with milk and poured the batter into their dented shields using them as frying pans.  The resulting “bumpy pancakes” became the round aebleskiver now cooked in special iron griddles with hollows in them to form the cakes into little balls.

 

 

AEBLESKIVER RECIPE
 
2 cups buttermilk                                              3 eggs

             1-teaspoon baking soda                                    ½ teaspoon salt

                         2-teaspoons sugar                                            1-teaspoon baking soda

                2 cups flour                                                      2-teaspoons sugar

 

Mix egg yolks, add sugar, and mix in buttermilk, flour, and baking powder.  Beat egg whites and add last.

 

When cooking, add oil (approx 1 tsp) to each cup of the pan and get hot before adding the batter.  Turn the cake little by little to form the ball.
